Baked Tomato Slices

This Lunch recipe is one of my favorites for 3 big reasons, it’s easy, feels kind of fancy, and I honestly am not a fan of tomatoes, I usually only like to tolerate them cooked into something, but I do love eating this. 

I however apologize in advance because I don’t actually measure anything. 
 

This time with quinoa under it


Cook time? 30 minutes tops. 
Serving for 3. 

Ingredients:

2 tomatoes 

Fresh low fat Mozzarella

Parsley flakes 

Sea salt 

Olive oil 

Pepper 



Directions:

Cut tomatoes into thick slices and place on lightly oiled baking sheets, sprinkle salt, pepper and parsley flakes, cut fresh mozz into small thin squares and place on top of tomato slices, bake 10-15 minutes or until mozz melts over tomato slices.
