T. Bacon Tomato and Chicken Salad

This is a new lunch recipe that my husband and I really enjoyed, it can be a little bit time consuming, but totally worth it. 

Cook time? 1 hour 

Serving 4. 

Ingredients

  • Half bag of boneless skinless chicken breasts or tenders. 
  • Half package of turkey bacon 
  • Half a carton of baby tomatoes 
  • Half a package of green onions 
  • Olive oil 
  • Sea Salt 
  • Pepper 
  • Garlic powder
  • Light mayonnaise 

Directions 

  • Put chicken in the oven with olive oil, salt, pepper and garlic powder, bake 45 minutes on 400 while you fry turkey bacon in skillet with olive oil and same seasoning, also cut up baby tomatoes, and green onion. 
  • Once everything is done and cut up, mix together, and add about 3 table spoons of mayonnaise. 

I hope you enjoy this as much as we did, but I’d also like to give some tips on cooking turkey bacon. So many people try to switch to it instead of using regular bacon, but they quickly decide they don’t like it..and I’d love to pass on how we’ve cooked it so that we have come to actually like it. 

  1. Use extra olive oil, and cook your turkey bacon until its slightly crispy. 
  2. Always use seasoning, of course salt and pepper, but sometimes I also add in Garlic, or onion powder, or red pepper flakes.
