Basil Pesto Quesadilla

This recipe has quickly become a lunch favorite for me, I really love Basil pesto and it’s a perfect match up with feta to put on pretty much everything. 

Cook time? 1 hour 

Serving size? 2 

Ingredients: 

  • Tortillas 
  • Kale 
  • Basil pesto 
  • Feta 
  • Fresh mozzarella 
  • Olive oil 

Directions:

If your kale is in large chunks like mine usually is, you’ll want to chop it up a little dinner. 

Cut up your mozzarella in small chunks or squares.

Slice a line about in the center of your Tortilla off to one side, Spread however much of the basil pesto you want on your tortilla (We really like it so I use some extra) 

Layer the rest of the ingredients however you want to, but fold your tortilla in triangles, layering it and wrapping it tight  (I make mine a bit thicker and press it tight while it cooks.) 

Cook in a pan or on a small counter top grill until Tortillas are slightly browned. 

Cut serve, fall in love!
